However, they have aroused only limited interest in the historiography, unlike cereals, spices, meats, or fruits. However, the texts of the medieval Islamic West reveal a great variety of dairy products, illustrated by an important lexical diversity. The article conducts an in-depth analysis of medical and culinary treatises. It apprehends dairy products by determining the nature and properties of foodstuffs resulting from the processing of milk.
